Ingredients: Serves 6
6 large poblano peppers
8 ounces of shredded Monterey Jack cheese, mozzarella cheese, etc.
4 cups of oil (for frying)
3 large eggs
½ cup of all purpose flour
½ teaspoon of salt
Method:
Wrap the peppers in aluminum foil and place in the broiler or on the grill until they are black and blistered
After roasting them, let them sit for five to 10 minutes.
While the peppers are resting, separate the egg whites from the yolks into two separate bowls – the whites into a large mixing bowl and the yolks into a small bowl. Using an electric hand mixer, beat the egg whites until stiff peaks form. The final mixture should be a sponge like consistency.
Unwrap the foil and slowly peel the poblano chili skins.
Make a small cut on the side of the chilis large enough to stuff the peppers with cheese. You can add any meats if you like.
Place the stuffed pepper in the egg batter first and then in a bowl of flour before frying them.
Fry them until they are golden brown and crispy. This should take about 5 minutes. Also, be sure to keep an eye on them or your fire alarm will go off like mine did during the video.
It is a really easy, messy, and fun recipe. What made the experience more worthwhile was talking about Josie’s experience working on the Hill. To see the first full episode, please visit Nutrait: https://nutrait.ai/dl/pler/5f5d547c9a0ca. You never know what recipes you may find on their platform. I am excited to be working on this project and I hope you enjoy the video and know that I will have future episodes on Will on the Hill and Backyard Bachelor!
