Grilled Salmon with a Teriyaki- Balsamic Glaze & Asparagus

Summer grilling is upon us and to continue off "The Menu," I am playing around with some grilling marinades with the idea of marinade as you go as opposed to longer marinades for chicken. For salmon, you can create your own dish but I wanted to focus on some other flavors that I haven't been using and pairing it with some fresh asparagus. The point is that these type of marinades might be common but effective in a cooking as you go!

Grilled Salmon

Ingredients:

2 Salmon Fillets

Balsamic Vinaigrette

Soy Sauce

Hoisin Sauce

Oregano

Chilli Powder

Salt & Pepper

Optional: Mustard

Method:

In a bowl or platter combine equal parts balsamic, soy sauce, and hoisin sauce along with the spices. You want enough to do an initial drizzle and leftover for brushing throughout the process

Gently brush the marinade with the salmon (top and sides)

Place the salmon on the grill skin side down. Let grill for a couple of minutes before flipping (about 5-8 minutes depending on thickness).

As the salmon is grilling continue brushing the marinade as it caramelized

Flip the salmon and brush the sides for an additional couple of minutes until it is fully cooked.

Remove the salmon from the grill to rest for a couple of minutes and add brush the marinade on top.

Serve and Enjoy

Grilled Asparagus

Ingredients:

Asparagus

Soy Sauce

Balsamic Vinaigrette

Olive Oil

Oregano

Red Chili Pepper Flake

Salt & Pepper

Method:

Cut the end of the stalks and rinse the asparagus

In a dish, combine equal parts Balsamic Vinaigrette and Soy Sauce with Salt, Pepper, Oregano, and Red Chili Flake.

Mix the asparagus with the marinade and let rest for 20 minutes before grilling

Grill and flip both sides until you see nice grill marks

Serve Immediately

Easy recipe and can be cooked around the same time as you go. This is my go to for when I need to mix it up and enjoy!
