The Penicillin Cocktail

We are approaching the springtime but we still have a couple winter cocktails to get through those remaining cold nights. The Penicillin was created by New York bartender Sam Ross that was inspired by another drink. This cocktail provides smooth, ginger, and citrus notes. Aside from making the simple syrup, this cocktail only requires three ingredients.

Ingredients:

Honey Simple Syrup Ingredients:

1.25 cups of water

6 ounces of ginger

0.25 cup of sugar

0.25 cup of Mike's Hot Honey

1 tablespoon of lemon zest

Cocktail Ingredients:

2 oz Shoulder Monkey Blended Scotch Whiskey

.75 oz lemon juice

.75 Honey and Lemon Simple Syrup

Garnish with candied ginger

Egg White

Method:

  1. We have made simple syrup a couple of times but check out the recap here.
  2. With the back of the spoon, peel the ginger to remove all the skin.
  3. Cut the ginger into tiny pieces.
  4. Gently boil the water before adding all the ginger. Let the ginger brew for about 5 to minutes before adding the sugar, lemon zest, and 1/4 cup of Mike's Hot Honey.
  5. Stir until everything is combined for another 5 minutes.
  6. Remove from the stovetop and let cool completely until it is at room temperature.
  7. In a cold cocktail shaker, combine all three ingredients.
  8. Shake thoroughly over ice and serve immediately.
  9. Garnish with candied ginger.

It is a fantastic cocktail! I really recommend it with a non-peated (not smoky) Scotch Whiskey. Monkey Shoulder joined my collection of alcohol and probably my new favorite Whiskey on hand!
