I am fasting for Great Lent and have been trying to come up with more vegetarian/vegan meals. I think one of the big sources that I have been using for proteins are chickpeas, beans, and lentils. Specifically, chickpea burger patties are fantastic to enhance a salad or to have a burger. This recipe should take about 30 minutes to prepare and cook.Ingredients
- 1.5 teaspoons Coriander
- 1.5 teaspoons Cumin
- Salt & Pepper
- Diced Red Onion
- 1 Carrot (grated)
- 1 can of Chickpeas
- 2 tablespoons of flour
- 1 egg
Method:
- Peel the skin and grate the carrot and set aside for later
- Rinse and drain the can of chickpeas. In a large bowl, since I don\'t own a food processor, mash the chickpeas with a fork or your knuckles until it resembles a rough paste.
- Combine the carrot, a little diced red onion, salt, pepper, cumin, coriander, flour, and egg together.
- Mix until everything is combined.
- As if you are making meatballs/burger patties, take small pieces and roll and flatten them to discs. I would try to make them a good size. Place on some parchment paper. You can shape them but don\'t work it too hard as it will be a bit wet to handle.
- On a medium-hot skillet, lightly oil the pan and fry the patties for about 2-3 minutes each side. They should look nicely cooked by then.
- Add a little salt and pepper and serve immediately as a burger or part of a salad.
For Burger Topping Ideas:Classic Burger Toppings: Lettuce, Tomato, pickles, mayo, ketchupBarbeque Style: Red onions (or caramelized), barbeque sauce, tomatoesGreen Veggie: Tomato, zesty lettuce, Mayo-sriracha aioli (my favorite)
I have been struggling with getting enough protein in my diet and these have been a big answer to this week. I think they are great to have with salads or if you are feeling a burger. These can be made ahead and be served as great appetizers for any time. I hope everyone has a safe and wonderful Easter! Greek Easter isn\'t for a couple more weeks and can\'t wait for it.Would you like to see more vegetarian dishes? Let me know in the comments below.
